BAM! It's Compassionate Cooking Sundays!

Ingredients
(1) 15 oz. jar of marinated artichoke hearts, drained (We like Native Forest)
(1) 15 oz. can chickpeas drained and rinsed (We like Eden Organic)
1 cup of grated zucchini (squeeze out water)
1 1/2 cups panko breadcrumbs (We like Edward and Sons)
1/2 cup of vegan mayonnaise
1 teaspoon of Dijon or yellow mustard
1 tablespoon of lemon juice lemon
1 tablespoon of old bay seasoning
Instructions
Preheat the oven to 400º Fahrenheit or use an air fryer.
Using a food processor, a fork, or your hands, smash the artichoke hearts and chickpeas until they still have a coarse texture.
In a large bowl, add all the ingredients and then form into patties.
Bake at 400º Fahrenheit for 15 minutes for each side or air fry.
