Valentine's/Galentine's Day Artichoke "Heart" ❤️ Crab Cakes

BAM! It's Compassionate Cooking Sundays!

Ingredients

(1) 15 oz. jar of marinated artichoke hearts, drained (We like Native Forest)

(1) 15 oz. can chickpeas drained and rinsed (We like Eden Organic)

1 cup of grated zucchini (squeeze out water)

1 1/2 cups panko breadcrumbs (We like Edward and Sons)

1/2 cup of vegan mayonnaise

1 teaspoon of Dijon or yellow mustard

1 tablespoon of lemon juice lemon

1 tablespoon of old bay seasoning


Instructions

  1. Preheat the oven to 400º Fahrenheit or use an air fryer.

  2. Using a food processor, a fork, or your hands, smash the artichoke hearts and chickpeas until they still have a coarse texture.

  3. In a large bowl, add all the ingredients and then form into patties.

  4. Bake at 400º Fahrenheit for 15 minutes for each side or air fry.

  5. Enjoy!
