Valentine's Day/Galentine's Day ❤️ Vegan Butterfingers

Easy Vegan Butterfingers

Ingredients

2 3/4 cups of vegan cornflake cereal (We like Nature's Path)

1/3 cup of maple syrup (We like Butternut Maple Farm)

1 cup of creamy, unsweetened, and unsalted peanut butter (We like Once Again)

2 cups of semi-sweet or any type of vegan chocolate that sweetens your soul (We like Good Life)


Instructions

  1. Grind the cornflakes in a blender, or a "manual" push chopper, or a food processor, or heck, relieve some stress by even putting them in a Ziploc bag and smashing them with a mallet.

  2. With a large spoon or spatula, mix the cornflakes, maple syrup, and peanut butter together.

  3. Using your hands, shape them into "butterfinger-shaped" bars and place them on a parchment-covered baking sheet.

  4. Pop in the freezer for 15 minutes so they get stiff and firm.

  5. Melt the chocolate in a saucepan, constantly stirring, so it doesn't burn, or microwave in 15-second increments, checking it in between and stirring.

  6. Remove the bars from the freezer and dip them in the chocolate.


Special Notes

  • Make sure your cornflakes are vegan - many cereals are fortified with Vitamin D.
