Todd's Chickpea Stuffed Mushrooms

Ingredients

1 can of chickpeas

A container and/or about 15 mushrooms of baby bella or crimini mushroom stems (or any shroom your heart desires)

1/4 cup of red onion

1 -2 cloves of garlic (depends on how garlicky you like your dishes)

1 - 2 tablespoons of nutritional yeast

3 handfuls of chopped spinach

Salt & pepper to taste


Instructions

  1. De-stem the mushrooms and save the stems

  2. Mash the chickpeas (option to remove the chickpea skin)

  3. Finely chop the veggies, including the mushroom stems and garlic

  4. Squeeze together stuffing and place stuffing in the mushroom caps

  5. Air fry for 20 minutes. You can also bake for 20 minutes at 350º Fahrenheit

Look at these chickpeas (ok pot bellies) Lily and Willow wallowing together - a bond like no other. Pigs have bonds just like us!
