Craig's Corn and Bean Salad

Ingredients

(1) 10 oz. bag of frozen corn

(1) 14.5 oz. can of black beans

1/4 cup of olive oil

The juice of (1) lime

1/4 cup of chopped cilantro

Salt and pepper to taste


Instructions

  1. Cook and cool the corn. Drain and rinse the beans. Chop the cilantro.

  2. Combine the corn, beans, and cilantro in a large bowl. Add oil, juice, and salt and pepper.

  3. Mix and chill for at least 60 minutes.


Special Notes

  • Microwave is the easiest way to cook the corn.

  • This is a very simple salad that is better the next day.
