Super Bowl Sunday - Team Kansas City: Pulled BBQ Sliders

Ingredients

Two cans or packages of young green jackfruit in water (We like Native Forest)

1 Vidalia chopped onion

1/4 cup BBQ seasoning =

  • 2 tablespoons of dark brown sugar

  • 1 teaspoon of garlic powder

  • 1 teaspoon of cayenne

  • 1 teaspoon of paprika

  • 1/2 teaspoon of chili powder

  • 1/2 teaspoon of salt

3/4 cup of Kansas City-style BBQ sauce


Instructions

  1. Rinse and thoroughly dry jackfruit.

  2. Chop off the center portion of the jackfruit and toss it. Place the remaining jackfruit in a mixing bowl.

  3. Mix together BBQ seasoning and add to the bowl with the jackfruit. Toss to make sure that all the jackfruit is fully coated.

  4. In a large pot or "Instapot," pour in some oil and the seasoned jackfruit.

  5. Slow cook for 3 - 4 hours in an instant pot, slow cooker, or large pot, stirring occasionally.

  6. Stir and fold in the BBQ sauce.

  7. Toast your slider buns and slop on the BBQ mixture.


Special Notes

  • If you are a non-Jackfruit believer like me, I encourage you to give this little fruit another chance.

  • You'll want to toast slider rolls!

  • While not Kansas City style, I love Dinosaur BBQ Habanero sauce.

  • I love to use the "Barvecue" brand of pulled BBQ, which already has the seasoning in it.
