Ingredients
Batter
1/2 cup unsweetened almond milk
1/2 cup water
1/2 cup all-purpose flour (Bob's Red Mill Unbleached All-Purpose flour)
1 teaspoon garlic powder
1 teaspoon cayenne powder or jalapeño powder (optional)
Cauliflower Prep
4 cups cauliflower florets
1 tablespoon of unsalted vegan butter
1 1/4 cups vegan buffalo hot sauce (see recipe below if you don't have store-bought)
Instructions
Using a bowl with a top, mix the almond milk, water, flour, and cayenne powder. Stir until it's combined. The batter should be thick but not too thick.
Place the cauliflower into the bowl, put the top on it, and shake the bowl so that the cauliflower is evenly coated.
Place the cauliflower on a baking sheet or round pie tin.
Bake for 10 minutes, remove from the oven, and use a fork to turn over each piece. Bake for another 10 minutes, until crispy.
Combine the buffalo hot sauce with the butter and microwave for 15 to 30 seconds until the butter begins to melt.
Once the cauliflower is done, remove it from the oven and set aside until the pieces are cool enough to handle. Pour the buffalo hot sauce into a sealed container or a Ziploc. If using a Ziploc, make sure the sauce has cooled down.
Place the baked cauliflower in the bag/sealed container and shake vigorously so that the buffalo hot sauce is evenly distributed.
Return the buffalo hot sauce-coated florets to the original baking sheet or pie tin and place them back into the oven. Bake for another 15-20 minutes.
Serve with vegan ranch, carrots, broccoli, and celery sticks.
Vegan Buffalo Sauce
(If you don't have store-bought)
Ingredients
1 1/4 cup of Louisiana-style hot sauce (Frank's Red Hot Original or Crystal Louisiana)
1/2 cup or 1 stick of vegan butter
1 teaspoon of garlic powder
1 tablespoon of vegan Worcestershire (The Wizards Sauce Organic Gluten Free and Vegan Worcestershire sauce)
2 teaspoons of water
2 teaspoons of cornstarch
Salt & pepper to taste
Instructions
Form a slurry with the cornstarch and water by whisking together
Grab a saucepan over medium-low heat, add the hot sauce, Worcestershire sauce, garlic powder, and salt and pepper. Add in the slurry and whisk.
Once you see the sauce bubble, turn off the burner. Add in a few tablespoons of vegan butter and stir until fully melted. Keep gradually adding in a few tablespoons of vegan butter until fully melted and blended into the mixture.
Keep stirring until the sauce is creamy. You can also put it in a blender to get it fully mixed and to further activate the cornstarch.
Special Notes
If you go the store-bought route for buffalo hot sauce, please make sure it's vegan. Many of them have butter in them.
For a smoky flavor, you can use a pellet grill.
