BAM! It's Compassionate Cooking Sunday!

Ingredients

1 box of seitan sliced thin (We like Blackbird Foods)

¼ cup of sliced cremini or shitake mushrooms

½ Vidalia onion, sliced

1 red bell pepper, sliced

1 tablespoon of vegan Worcestershire sauce (We like The Wizards Sauce)

Salt & pepper to taste

Vegan "Whiz" cheese sauce (Cheese recipe here or below if you didn't get store-bought or want to make your own)

Slider buns - divided hoagie (traditional) or potato buns

Instructions

  1. In a large pot or "Instapot," sauté the vegetables in avocado/olive oil until caramelized (about 10 minutes)

  2. Remove the vegetables from the pot/pan and put into a bowl.

  3. Now add the thinly sliced seitan and Worcestershire Sauce to the large pot or "Instapot" that you just cooked the vegetables in. Add salt and pepper to taste.

  4. Once the seitan begins to brown, add the vegetable mixture back into the pot, mix together, and set aside.

  5. Toast slider rolls and add in the Philly steak mixture, then pour the cheese sauce. If you use traditional hoagie rolls, you will just cut the hoagie into slider size.

Cheese "Whiz" Sauce

(If you didn't use store-bought

or want to make it homemade)

Ingredients

4 medium Yukon gold potatoes - cubed

2 medium carrots - cubed the same size as potatoes

1 cup of nutritional yeast (We like Bragg)

1 1/2 cups of vegetable broth, more or less based on consistency

1 teaspoon of onion powder

1/4 teaspoon of garlic powder

1/4 teaspoon of turmeric

Juice of half a lemon

Instructions

  1. Boil the potatoes and carrots until soft.

  2. Then, in a blender, blend in all the other ingredients! Blend away, and you have cheese sauce!

Special Notes

  • I recommend making the cheese "whiz" sauce first so it's ready to go, or if you want it to be easy, buy it in your store.

  • Some people like vegan mayonnaise on both sides of the toasted slider rolls.

  • Before you purchase them buns, make sure you look at the ingredients in the buns, as many of them contain milk or butter.

  • You can use any type of bell pepper you want.
