The Bigs: Mighty Main Meals

Ingredients
2 tablespoons of olive oil (We like to use a 2-in-one oil sprayer & dispenser)
1 bag of vegan ground beef or 1 batch of chickpea ground beef (see recipe below)
6 garlic cloves, minced
3 cups of diced onions (yellow or white)
2 jalapeño peppers, seeded and finely diced
3 cups of diced mushrooms
Chili spices:
1 1/2 tablespoons ground cumin
2 tablespoons chili powder
2 teaspoons dried oregano
2 teaspoons salt
1 teaspoon cayenne pepper
(1) 6-ounce can tomato paste
(1) 7-ounce can of chipotle peppers in adobo sauce
4-6 ounces vegan dark chocolate (We like Raaka)
3 cups diced fresh tomatoes or (1) 28-ounce can of chopped tomatoes
2 cups finely chopped carrots
3 cups diced red and/or green bell peppers
Beans:
1 can of black beans (We like Eden Organic)
1 can of kidney beans (We like Eden Organic)
1 can of pinto beans (We like Eden Organic)
1 cup chopped fresh cilantro
2-3 cups vegetable broth
Instructions
Heat the olive oil in a large pot over medium-high heat.
Add vegan ground beef and sauté for about 3 minutes.
Add onions and mushrooms and sauté until onions are tender, about 7 minutes.
Add garlic and sauté for 5 minutes.
Stir in cumin, chili powder, oregano, salt, and cayenne pepper and simmer for 1 minute, then pour in 1 cup of water to deglaze the pan.
Add tomato paste, chipotles, and chocolate and simmer, covering it for 5 minutes.
Add tomatoes, onions, carrots, peppers, and 2 cups of vegetable broth and simmer until vegetables are tender, about 30 minutes, stirring occasionally.
Add beans and cilantro to chili.
Add vegetable broth to reach the desired consistency. Add fresh ground black pepper to taste.
Serve with your choice of toppings (avocado, vegan sour cream, cornbread, vegan shredded cheese, diced red onion, diced pickles, etc.).
Chickpea Ground Beef
(If you don't use store-bought vegan meat)
Ingredients
2 cans chickpeas
2 tablespoons of olive oil
1 teaspoon of cumin
1 teaspoon of smoked paprika (optional)
1 teaspoon of garlic powder
1 teaspoon of onion powder
⅔ cup water
Salt & pepper
Instructions
Chickpea Ground Beef
Drain and rinse chickpeas and then pulse in a food processor to reach a crumbled consistency
Heat olive oil in a skillet on medium heat
Add chickpeas and spices and sauté for about a minute
Add in water, a little at a time, and stir to reach the desired consistency
Cook uncovered for about 2 minutes, stirring frequently
Special Notes
This is a basic framework for chili. Please feel free to play around with amounts and seasonings to suit your own taste. Additional add-ins could include cocoa powder, cinnamon, garam masala, hot sauce, red wine vinegar
