St. Patrick's Day: Corned Beef Reuben Sandwich with Russian Dressing

Ingredients
1 (14 or 16 oz.) Block of extra-firm tofu, (for meatier texture, freeze and thaw), pressed and drained
1 small raw beet (optional for color)
1 cup vegetable broth
2 tablespoons of apple cider vinegar
2 tablespoons of mellow white miso
2 teaspoon of Dijon mustard
1 teaspoon of black pepper
1 teaspoon of ground coriander
1 teaspoon of paprika
1 teaspoon of garlic powder
1 teaspoon of onion powder
Olive oil for baking (optional)
Homemade Russian Dressing (Optional)
½ cup of mayonnaise.
2 tablespoons of ketchup
2 tablespoons of pickle relish
2 tablespoons of fresh lemon juice
1 teaspoon of Worcestershire sauce
½ teaspoon of coarse salt
¼ teaspoon of freshly ground pepper
Instructions
Slice the block of tofu thinly using a sharp knife or an extra-wide peeler (cabbage grater). Place the slices in a large, airtight container.
Blend the beet, vegetable broth, apple cider vinegar, miso, Dijon mustard, black pepper, coriander, paprika, garlic powder, and onion powder in a blender until a smooth liquid forms.
Transfer the liquid to the container with the tofu. Gently toss the tofu until it is submerged in the liquid. Marinate for at least 30 minutes. You can also marinate overnight in the refrigerator.
Preheat the oven to 425°F.
Transfer the tofu slices to a large nonstick baking sheet in a single layer. Brush both sides lightly with oil. Cook for about 25 minutes, or until lightly crispy. Flip the tofu over after 10 minutes and baste both sides. Baste again at the 20 minute mark. You can also air-fry the tofu at 400°F for about 15 minutes, or until lightly crispy, basting frequently. Don't let it get too crispy, just lightly crispy.
Toast up rye or sourdough bread and spread toast with vegan Russian (see above recipe for Russian dressing), and sauerkraut. The sandwich can then be put in a panini press if desired.
Special Notes

You could also use mustard if you aren't into Russian dressing.
