St. Patrick's Day: Irish Soda Bread

Vegan Irish Soda Bread

Ingredients

1 1/2 cups of unsweetened almond milk (Califia Farms)

2 tablespoons of apple cider vinegar (Bragg)

2 cups of chickpea flour (Bob's Red Mill)

1/4 cup of tapioca flour (Bob's Red Mill)

2 cups of rice flour (Bob's Red Mill)

6 teaspoons of baking powder

1/2 teaspoon of baking soda

A pinch of salt

1/2 cup of water

1 cup of raisins, currants, or cranberries


Instructions

  1. Preheat your oven to 350℉

  2. Grease and line an 8 inch round tin and also line with parchment paper.

  3. Mix the almond milk and apple cider vinegar in one bowl and let it sit for 15 minutes. This makes your vegan buttermilk.

  4. Place the rice flour, chickpea flour, tapioca flour, baking soda, baking powder, salt and dried fruit of choice in a large mixing bowl and whisk the ingredients until they are fully blended together.

  5. Add the water and almond milk/ apple cider vinegar mixture and stir together using a spatula or a wooden spoon.

  6. Move the dough into the greased 8-inch round tin.

  7. You can look fancy by taking a knife and drawing a cross over the top of the dough.

  8. Bake for approximately 45 minutes, until risen and a toothpick or skewer comes out clean.

  9. Best enjoyed warm and out of the oven.
