BAM! It's Compassionate Cooking Sunday!

Ingredients
Avocado or Olive Oil for cooking (We like this 2 in 1 oil dispenser/sprayer)
1/2 cup of yellow/sweet onion - diced
2 - 2 1/2 cups or a package of frozen chopped spinach
8 oz. plant-based cream cheese
1/2 cup plant-based sour cream
2 cups of shredded vegan cheese (Mozzarella, Monterey Jack, or Parmesan)
14 oz. canned marinated artichoke, drained, rinsed, and chopped (We like Native Forest)
1/3 cup original, unsweetened, dairy-free milk
1 tablespoon of garlic powder
1 1/2 tablespoons nutritional yeast (We like Bragg)
1 teaspoon of cayenne or jalapeńo powder (if you want that kick)
Salt and pepper to taste
Instructions
Preheat your oven to 350°Fahrenheit
Spray your saucepan/skillet with avocado or olive oil. Cook the diced onion in the pan and cook for 4 minutes until it becomes translucent.
Drain and chop the artichokes if needed - set aside.
Add the frozen spinach to the onions in the medium-heat pan. Cook for about 5-7 minutes or until the spinach has thawed and the majority of the liquid is gone.
Reduce heat to a low flame. Add the dairy-free cream cheese and sour cream. Stir until they're melted and well combined with the spinach mixture.
Add in the shredded cheeses, stirring constantly until they melt into the mixture. Then add the chopped artichokes to the pan and stir into the mixture.
Gradually pour in the plant-based milk and stir until you reach a consistency that you like. You don't want it to be runny.
Add the garlic powder, cayenne, or jalapeño powder (optional), salt, and pepper, and generously stir. Cook for a couple of minutes longer, stirring occasionally, to allow all the ingredients to blend together.
Transfer the dip to an oven-safe casserole dish. Smooth the top with a spatula, and then sprinkle some extra shredded cheese on top.
Bake for about 15 minutes until the dip is bubbling.
Special Notes
This recipe calls for packaged cheese. I recommend Good Plant as it's made with olive oil. However, you could make this healthier by making your own cashew cheese.
I like Treeline sour cream and Oatly or Tofutti cream cheese
