Quiche Florentine

Vegan Quiche Florentine

Ingredients

  • (1) pre-made frozen vegan pie crust

  • 1 carton of Just Egg

  • 1 cup of spinach leaves

  • 1/2 cup of sliced mushrooms

  • 1/3 cup vegan mozarella shredded cheese

  • 1/4 cup of finely chopped shallots

  • 1/2 teaspoon of salt

  • 1/2 teaspoon of pepper

  • 1/2 teaspoon of smoked paprika

  • Siracha hot sauce to top it off


Instructions

  1. Preheat the oven to 350℉

  2. Pour the Just Egg into a large bowl and then add in all the ingredients and stir together. Leave half of the vegan cheese and set aside.

  3. Sprinkle vegan cheese into bottom of pie shell then pour Just Egg mixture into pie shell.

  4. Bake at 350℉ at 60 minutes or until the mixture no longer jiggles in the center and a toothpick comes out clean.

  5. Let cool for 15 minutes before serving.


Special Notes

  • You want to place pie shell on baking sheet in case the quiche overflows.
