Pumpkin Pancakes

Bam! It's Vegan: AAAS Family Recipes

Ingredients

1 cup of plant-based milk

1 tablespoon of lemon juice

⅓ cup of pumpkin 

1 tablespoon of plant-based butter

½ teaspoon of vanilla

1 teaspoon of baking powder

½ teaspoon of baking soda

3 tablespoons of brown sugar

1 tablespoon of maple syrup

1 teaspoon of cinnamon

1 cup of flour

Pinch of salt


Instructions

  1. Combine milk and lemon juice

  2. Let the batter rest for 5 minutes

  3. Add melted butter, vanilla, maple syrup, brown sugar, pumpkin, and vanilla, and whisk

  4. Add baking powder, baking soda, flour, salt, and spices. Sift over wet ingredients and mix

  5. Let the batter rest for 5-10 minutes

  6. Pour on the griddle and flip when bubbles form
