Pineapple Pancakes

Ingredients
Pancake Batter
2 cups flour
4 tablespoons organic sugar
2 tablespoons baking powder
1 teaspoon salt
2 cups unsweetened almond milk
2 teaspoons vanilla
2 tablespoons apple cider vinegar
1 can of pineapple rings in its own juice or fresh pineapple
Pineapple Marinade
Maple syrup or brown sugar
Melted vegan butter
1/4 teaspoon of cinnamon
Instructions
In a small bowl, whisk together the brown sugar, butter, and cinnamon. You don't need to measure. Just enough to make a marinade.
Brush the pineapple rings with the marinade.
Generously spray the pan/grill with avocado oil. Grill the pineapple on a skillet for about 2 minutes on each side or until it's seared.
Add the sugar, flour, baking powder, and salt to a medium bowl and combine using a whisk.
Add almond milk, apple cider vinegar, and vanilla to a glass measuring cup and whisk to combine.
Pour the liquid mixture into the dry mixture and whisk until smooth and not lumpy. Let batter rest for 8 minutes.
Pour about ½ cup of batter onto a nonstick pan or griddle over medium heat. Place the pineapple rings on each pancake and press down gently.
When the top begins to bubble, flip the pancake and cook until golden.
Serve warm with maple syrup and top with more pineapple - why not?
Special Notes
You can actually skip the marinade altogether, and you will still have delicious, cooked pineapple even if you place the pineapple in the batter without grilling it.
You can also use pineapple chunks, but they won't cook as easily.
It is critical that you let the batter rest; otherwise, you will not have fluffy pancakes.
