Bam! It's Vegan: AAAS Family Recipes

Ingredients
Bread:
One teaspoon of instant active dry yeast (fast-acting)
3/4 cup of lukewarm water
1 teaspoon of organic granulated sugar
2 cups of all-purpose flour
1 teaspoon of salt
3/4 teaspoon of baking powder
3 tablespoons of plant-based unsweetened plain yogurt
2 tablespoons of olive oil
Topping:
1 1/2 tablespoons of olive oil
1 tablespoon of minced garlic
Fresh parsley (optional)
Instructions
Put the active dry yeast, and granulated sugar into a large bowl and then pour the lukewarm water over it. It should be approximately between 105°F and 115°F or warm enough to be bath water. (although no taking a bath here). Let it sit for about 5 minutes and the appearance should look frothy on top.
Add in the flour, baking powder, salt, yogurt and olive oil.
Stir with a spatula until it forms a ball and the dough pulls away from the bowl.
Place the ball of dough onto a lightly floured surface such as a pastry mat. Lightly flour your hands so the dough doesn't stick and knead the dough for about 5 minutes. The dough should be soft and smooth. If you got stick you must add a little more flour!
Put the dough back into the bowl you were using and cover with plastic wrap or a tea towel. Let the dough rise for 45 minutes to 1 hour.
Once the dough rises, remove and place back onto the floured surface, flatten it and divide it into 6 pieces.
Heat a cast iron skillet or pan on medium heat. With a rolling pin or even a glass jar roll out the dough and shape it into an oval shape.
With a pastry brush, brush the olive oil/garlic mixture onto the dough.
Put the dough on the grill/griddle/pan and wait until bubbles form (kinda like a pancake) and the bottom is golden brown. Flip until other side is golden brown.
Sprinkle with fresh parsley if desired
Enjoy with your favorite Indian dish, or its yummy on its own.
Special Notes
Make sure your dry active yeast is not old. It will make all the difference with how the naan comes out.
Make sure your hot water is the temperature of bathwater and not boiling. If it's too hot your yeast will not work properly.
