Mango Lime Frozen Yogurt Pie

Vegan Mango Lime Frozen Yogurt Pie

Ingredients


Pie Ingredients:

9 oz. ounce frozen vegan whipped topping, or you can make your own whipped cream if you want (So Delicious or Tru Whip Vegan are both good choices)

12 oz. of vegan vanilla yogurt (Forager)

1 cup of chopped mango, fresh or frozen

3 - 5 tablespoons of lime juice depending on how tart you like it.

Pre-made vegan graham cracker crust (Mi-Del)

Garnish: More fruit or graham cracker crumbs


Whip Cream Ingredients: (Only if you feel like making your own)

Vegan heavy cream (Califia Farms Heavy Whip)

2 tablespoons of powdered sugar


Instructions


Pie Filling

  1. In a large bowl, stir together the yogurt and whipped cream until it is fully blended.

  2. Once it's mixed, add in the mango and lime juice and stir again until the fruit appears to be evenly distributed. You can also blend it in a blender if you don't want chunks of mango as seen in the above picture.

  3. Pour the mixture into the pie crust. Evenly distribute the filling to the edges of the pie tin and smooth with the back of a spoon or a spatula.

  4. Freeze until firm, about 2 hours.

  5. Remove from the freezer for a bit so the pie gets soft enough you can cut into it without a struggle. Garnish with fresh fruit or graham cracker crumbles.


Homemade Whip Cream (Only if you feel like making your own)

  1. Pour the heavy cream into a stand mixer and add the powdered sugar. Whip on high until stiff peaks form.

  2. You can add in more powdered sugar if you like your whipped cream sweet.


Special Notes

  • The above picture shows the pie blended in a blender vs. adding in chopped fruit.

  • You can truly use any type of vegan yogurt, fruit, or fruit juice you want. Just keep the measurements the same! You do you!
