Eggnog Pudding

BAM! It's Compassionate Cooking Sundays!

Ingredients

1 cup soaked unsalted cashews

1 cup almond milk or plant-based milk of your choice

1/2 teaspoon of Ceylon cinnamon (We like True Organic)

1/4 teaspoon of nutmeg (We like Simply Organic)

1 teaspoon of vanilla


Instructions

  1. Soak the cashews for about 1 1/2 hours in hot water

  2. Soak the pitted dates with the cashews

  3. Blend all the ingredients in a Nutra-bullet or Ninja and refrigerate for a few hours


Special Notes

  • I go a little heavy on the Ceylon cinnamon
