Ingredients
Donuts:
1 1/2 cups all-purpose flour
1/2 cup of sugar
1 1/2 teaspoons baking powder
1/2 teaspoon Himalayan pink salt (or any salt will do)
1/2 teaspoon Vietnamese cinnamon (no worries if you don't have this exact cinnamon)
1/2 cup apple cider
1/4 cup unsweetened almond milk (or other unsweetened plant-based milk)
3 tablespoons unsweetened applesauce
2 tablespoons melted vegan butter
Topping:
3/4 cup sugar
4 tablespoons melted vegan butter
1 teaspoon maple cream
2 1/4 teaspoons Vietnamese cinnamon
Instructions
Preheat the oven to 350 degrees Fahrenheit and spray a donut pan (or two if you have it) with nonstick spray.
In a large bowl, whisk together the flour, sugar, baking powder, cinnamon and salt.
Pour in the apple cider, almond milk, unsweetened applesauce, and melted vegan butter. Mix well but just enough that the ingredients are blended together as you do not want to overmix. The batter will be thick.
Spoon the batter into the donut pan evenly into each donut mold. You want to fill approximately 3/4 of the way full. Wipe any drips around the donut mold.
Bake for 8-10 minutes. They should spring back to you when lightly pressed with your finger and the edges of the donut are golden brown.
Cool in the pan for about 3 minutes, then flip onto a cooling rack or you can carefully use a spoon to separate the donuts from the pan.
As the donuts are in the oven, make the topping by mixing together the sugar and cinnamon in a bowl. Melt the vegan butter and mix in the maple cream to it.
Brush each donut with vegan butter/maple cream mixture and then dip into the sugar/cinnamon mix and coat well.
Serve while hot and fresh!
Special Notes:
I like to use Melt brand butter.
I like King Arthur's Maple Cream
It's important that you use apple cider not just apple juice.
