Delicious Not Nutritious Desserts: Treat Yourself!

Ingredients
Cake
1 ¾ cups all-purpose flour
1 cup white organic granulated sugar
1 teaspoon of baking soda
½ teaspoon of salt
¾ cup of plant-based milk (I prefer Almond Milk)
¼ cup of pineapple juice saved from the cans of pineapples
2 teaspoons of Madagascar vanilla extract (if you don't have Madagascar vanilla, it's okay!)
1 tablespoon of apple cider vinegar from the mother
⅓ cup of neutral vegetable oil
Topping
10-12 slices of pineapple rings. The cans are packed in juice.
¼ cup of melted vegan butter
½ cup of brown sugar
10-20 vegan maraschino cherries
3 tablespoons of vegan bourbon. This is optional but will give the cake flavor more complexity.
Instructions
Preheat the oven to 350 degrees Fahrenheit. Spray a 9-inch round cake pan with non-stick spray, or you can grease it. Either way make sure its generously greased,
Melt the vegan butter and pour it into the bottom of the cake pan. Spread the butter evenly. Sprinkle the brown sugar over the melted butter.
Layer the pineapple slices along the bottom. You will have to cut some pineapple in half to use around the sides. Everywhere you see a space, you will place the cherries. Set aside.
Grab your sifter, sift the flour into a mixing bowl, and add granulated sugar, salt, and mix.
Add plant-based milk, vanilla, pineapple juice from the can, apple cider vinegar, and whisk away.
Pour over pineapple and smooth it with a spatula.
Bake for approximately 50 minutes, and at 30 minutes into baking, check it out and remove it from the oven. Loosely cover it with foil, and return to the oven for another 20 minutes. Test with a toothpick in the center of the cake until it comes out clean. You may need to test several spot but definitely do the center. Let the cake cool for about 15 minutes before flipping it on a plate. Flip it! Lift up the cake pan after waiting about 10 seconds.

Don't forget the sift step, as it ensures a lighter and airy texture to the cake.
Very important to get the pineapple rings that come in their own juice.
