Bam! It's Vegan: AAAS Family Recipes

Ingredients
2 large, or 3 medium-sized bananas (very ripe, or overripe)
1/3 cup of brown sugar (plus another ¼ cup set aside for topping)
1/3 cup of organic granulated white sugar
1/3 cup of sunflower oil, or oil of your choice (canola, avocado, or coconut oil, with varying results)
2 ½ teaspoons vanilla extract
2 cups of all-purpose flour (or mix in half with whole wheat flour)
1 teaspoon baking soda
1 teaspoon ground cinnamon
1 - 2 teaspoons maple syrup
1 teaspoon salt
1 cup chopped nuts (you can use any nuts or seeds of your choice, or omit them)
Instructions
Pre-heat oven to 350º Fahrenheit grease your pan and line it with parchment paper
Mash up ripe bananas with a fork enough to get all the lumps unless you want some banana chunks.
Add in brown sugar, granulated sugar, oil, maple syrup, and vanilla extract, and stir
In another bowl add in flour, baking soda, and cinnamon. Sift the ingredients to give it a smoother texture. Whisk dry ingredients together.
Add the dry ingredients to the wet mixture until it's just mixed. Do not overmix.
Fold in the nuts. (optional)
You can top the batter with brown or coconut sugar to give the top a little crunch.
Bake for about 45-50 minutes and test with a toothpick to see if it comes out clean.
Special Notes
You need very ripe bananas
You can use any neutral oil
Coconut oil is not recommended as it will make the batter very dense
